These vegan sausage rolls are a great way to start the meal or as a snack. They are made with flaky puff pastry and filled with lentils, mushrooms, and tasty spices. They make a tasty treat that doesn't hurt animals.
Ingredients: 2 cups cooked lentils. 1 cup finely chopped mushrooms. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 tablespoon tomato paste. 1 teaspoon smoked paprika. 1 teaspoon dried thyme. 1/2 teaspoon fennel seeds. Salt and pepper to taste. 1 sheet vegan puff pastry. 1 tablespoon plant-based milk, for brushing.
Instructions: Preheat oven to 200C 400F. In a large bowl, mash the cooked lentils with a fork or potato masher. Add mushrooms, onion, garlic, soy sauce, tomato paste, smoked paprika, thyme, fennel seeds, salt, and pepper to the bowl. Mix until well combined. Roll out the puff pastry on a lightly floured surface. Cut the pastry sheet into smaller rectangles. Place a spoonful of the lentil mixture along the center of each rectangle. Fold the pastry over the filling and seal the edges with a fork. Repeat with remaining pastry and filling. Place the vegan sausage rolls on a baking sheet lined with parchment paper. Brush the tops of the sausage rolls with plant-based milk for a golden finish. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crispy.
