This is a vegan version of the traditional gyro sandwich. It has warm whole wheat pitas, crispy roasted chickpeas seasoned with Mediterranean spices, fresh vegetables, and a creamy vegan tzatziki sauce.
Ingredients: 1 can chickpeas, drained and rinsed. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/4 teaspoon cayenne pepper optional. Salt and pepper, to taste. 4 whole wheat pitas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced cucumber. 1/4 cup diced red onion. 1/4 cup sliced black olives optional. 1/2 cup vegan tzatziki sauce. Fresh lemon wedges, for serving.
Instructions: Preheat oven to 400F 200C. In a bowl, toss chickpeas with olive oil, cumin, paprika, garlic powder, cayenne pepper if using, salt, and pepper until evenly coated. Spread seasoned chickpeas onto a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, shaking the pan halfway through, until chickpeas are crispy. While chickpeas are roasting, warm pitas in the oven or on a skillet. Once chickpeas are done, assemble gyros by filling each warmed pita with shredded lettuce, diced tomatoes, diced cucumber, diced red onion, roasted chickpeas, sliced black olives if using, and drizzle with vegan tzatziki sauce. Serve gyros with fresh lemon wedges on the side. Enjoy your delicious Roasted Chickpea Gyros!
