Baked Cheese Zucchini Fritters These baked zucchini cakes are delicious and they are sure to be a hit with the family. In this recipe we use mozzarella cheese but you use whatever cheese or combination of cheeses you like. This recipe makes 14 patties and works well as a pot-luck contribution.
