Making this for the umpteenth time:
A healthier noodle dish that uses spiralized cucumber in place of half of the noodles. Fresh, healthy, vegan and gluten free.
I usually serve it with teriyaki marinated salmon, but I have tofu and edamame beans which need to be eaten.
This is probably the only recipe I use my veggie-spiralizer for, but I make this so often that the spiralizer was a good gift. I think a peeler or mandolin works as well.
