Vegetable Problems
When shopping for groceries, If I’m unable to pay by the lb. for vegetables like lettuce, kale, or spinach- I resort to buying a bundle or a tub. No matter how many salads I make, I get tired of eating it and have quite a bit left. This past week I had an abundance of spinach and I hated seeing it sit in the fridge, going bad. So, I got creative!
- Some of it was washed and chopped and stuck in the freezer. (Excellent for throwing in a casserole.)
-Some of it was steamed with tomatoes and eaten later that week.
- Some of it was thrown into lentil soup, and it was fantastic!
I felt accomplished that I was able to get the most out of that spinach tub!
Think creatively, and you too can squeeze in some extra nutrients and uses for those vegetables that would otherwise go bad, and later tossed in the yard.
Being resourceful takes practice- look for opportunity!
Mangetout very easy to grow. Also eaten fresh, it was sweet and extremely tender. Well worth the effort.
