It's LUNCHHHHHH time 😋 I'm usually not this excited, but today I have spring rolls which I made last night. They're stuffed with carrots, cucumber, mint and coriander, vermicelli. The beef is carne asada from a Mexican place near my work (I'm totally cheating 😉). I love having spring rolls with my nam pla prik-style sauce (Thai chillies and fish sauce). My sauce is made with chopped shallots, grape tomatoes and coriander stem/roots in fish sauce and lime juice.
