It's fridge clean up time! I made this one pan dish for Sunday night dinner out of leftover goodies in my fridge and here we have it: my rendition of nasi uduk (basmati rice cooked in coconut cream, lime leaves & coriander powder) layered with veggies & tofu, shredded rotisserie chicken, topped with shredded omelette & fresh coriander from the garden. It's LUNCHHHHHH time 😋 I'm usually not this excited, but today I have spring rolls which I made last night. They're stuffed with carrots, cucumber, mint and coriander, vermicelli. The beef is carne asada from a Mexican place near my work (I'm totally cheating 😉). I love having spring rolls with my nam pla prik-style sauce (Thai chillies and fish sauce). My sauce is made with chopped shallots, grape tomatoes and coriander stem/roots in fish sauce and lime juice.
