It has been a spell since I was vegetarian, and I do enjoy not being one! But I’m gonna be a pescatarian during Lent. We’ll see how that works out. Tonite’s #vegetarian meal is riced cauliflower with lentil/garbanzo “rice” and @charlesminot ‘s excellent marinara. We capped off @charlesminot ‘s birthday weekend with a delicious duck dinner. As I approach my 50th birthday, I’m not settled on which way I want to go for the next part of my life—vegetarian or omnivore. I was thinking omnivore, especially because I’m introducing pork products during #camino2020 . But as much as I enjoy the animal protein I currently consume, I’m not feeling totally great about it.
