My Diet Journey

Over a year ago, I was diagnosed with IBS.  About 6 months ago, I started eliminating the things my doctor recommended.  This included gluten, dairy, rice, potatoes and most added sugar.  There are also some fruits and vegetables that I can’t have.  I also started not snacking after dinner and taking a probiotic.  I have had a very difficult time finding meals that work for me, as most gluten free substitutes have rice or potato in them.  This is a place for me to post recipes and products that work for me, and hopefully help others if they have the same issues

As a little girl I grew up on risogalo (creamed rice pudding) but rice is out of the equation these days so I made a substitute. Spooned it into these terracotta pots which I brought back from kefalonia on our last trip(they had yogurt in them, which the caveman enjoyed). I may make it look easy, but please believe I need and want a clone, a maid, and or a live in chef. Ya girl be spread thin AF! I worked, came home and made Kailah stuffed bell peppers with quinoa, Kamille some goulash, both of their sauces were made from scratch, and wine for me.
