Ingredients: 2 boneless, skinless chicken breasts cut into thin strips. 4 cups cabbage shredded. 1 red bell pepper sliced. 1 yellow bell pepper sliced. 1 onion sliced. 3 cloves garlic minced. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon ginger minced. 1/2 teaspoon red pepper flakes optional. Salt and pepper to taste.
Instructions: Heat the vegetable oil in a large pan or wok over high heat. Add the chicken strips and stir-fry for 3-4 minutes or until cooked through. Remove from the pan and set aside. In the same pan, add more oil if needed and then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the sliced onions, red and yellow bell peppers, and shredded cabbage. Stir-fry for 5-6 minutes until the vegetables are tender yet still crisp. Return the cooked chicken to the pan and add soy sauce, oyster sauce, and red pepper flakes if desired. Season with salt and pepper to taste.
