Tropical Quinoa Tabouli is a bright and healthy salad that has the nutty flavor of quinoa and the sweetness of pineapple and mango. It goes well with a summer barbecue or can be eaten on its own as a light, healthy meal.
Ingredients: 1 cup quinoa. 2 cups water. 1 1/2 cups pineapple, diced. 1 cup mango, diced. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint, chopped. Juice of 2 limes. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Rinse the quinoa thoroughly under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until quinoa is cooked and water is absorbed. Remove quinoa from heat and let it cool to room temperature. In a large mixing bowl, combine the cooked quinoa, pineapple, mango, red bell pepper, red onion, cilantro, and mint. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine. Refrigerate the tabouli for at least 30 minutes before serving to allow flavors to meld. Serve chilled and garnish with extra cilantro and mint if desired.
