Ingredients: 3 medium zucchinis, spiralized. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup sliced black olives. 2 tablespoons chopped fresh basil. 2 tablespoons olive oil. 2 tablespoons lemon juice. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Put spiralized zucchini, cherry tomatoes, red onion, black olives, and basil in a large bowl. To make the dressing, mix the olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl with a whisk. Add the dressing to the zucchini mix and gently toss to coat everything.
