My second batch of wild violet jelly turned out more of a bright pink than the first batch, which was more pink-red (compared bottom left)! I wonder if it's the type of violets bc I used the same amount of violets in each!! 🍬

◊ Go outside and pick three cups worth of violet flowers.

◊ You'll also need one large lemon, one package of Sure-Jell Pectin, and 3½ cups of white sugar.

◊ Place the violets in a lidded bowl and pour 2½ cups boiling water over them. Close the lid and let it sit for a few hours to infuse.

◊ Strain the violets from the dyed water and transfer the water to a pot on the stove. Add a whole lemon's worth of juice and stir. The water will turn purple. Then stir in the whole package of pectin powder.

◊ Turn the heat on the stove up so the mixture comes to a boil. Be very careful not to let it boil over (which can happen within seconds if you aren't watching it!). Once it boils for a minute or two, stir in all of the sugar at once and keep stirring until the sugar is entirely melted into the liquid.

◊ Boil for one more minute, stirring constantly. Then transfer the liquid to your jars, lid them, and place them in the refrigerator to set.
