well i definitely think so, but unfortunately my mother and professors don't. so last night i wasn't able to bring the weekend to a close because i spent hours conjuring up random words to finish my psychology paper. but at least i got to do that on a full tummmy. a couple months ago i had stopped eating certain kinds of meat and found myself relying on chicken, salmon, eggwhites, and dairy products or whey for protein. i don't know why. i stopped eating red meat back in middle school and never found a craving for it since. but for some random reason on my weekly trip to trader joe's last week i decided to pick up their 99% fat free ground turkey. and since sunday is sunday (experimenting in the kitchen) i daringly pulled the chopped mea out of the fridge and decided to whip it up. i don't know if it was the spices and seasonings that made the flavor so great and if it would have tasted the same with ground chicken, but the deliciousness of the meal definitely turned my tasted buds back on to turkey, so i'll be sure to be buying it more! as for red meat, .... ehh still no craving for that.
Out of pure laziness I didn't really measure the ingredients, I kind of just kept tasting it and adding a little bit of this a little bit of that.
I cut and "gutted" (ew that word grosses me out) a red bell pepper and heated it in the oven to soften it. In the mean time, I sautéed onion in lemon, garlic, trader joe's 21 seasonings, and coconut oil. while that was cooking i steamed up some cauliflower and diced it in my food processor until it was cauliflower "rice". I added the turkey chopped meat to the sauté pan with about a 1/4 cup low sodium chicken broth and 1/2 tbsp parmesan cheese. once the turkey chopped meat cooked i added the cauliflower "rice" and 2 tbsp Herb-n-Zest tomato chives sauce (found this yummy one at Whole Foods) and right before it was all cooked i sprinkled a little nooch. Once the pepper was soft enough, I filled it with the turkey "rice" stuffing and topped it with some soy mozzarella and put it back in the oven for a couple minutes to melt. then bon appetite! the flavor was amazing!
After a delicious dinner with the family I hit the books, and finished just about all this week's work (nothing like last minute) but i typically save sunday's to be my ketchup day's anyway! of course the night wasn't complete with out a little casein microwave muffin, some cottage cheese, and pb2. i always love saving room in my calories for dessert. i treated myself to some new baking ingredients from Vitacost.com, prepped my overnight chocolate chia protein oats, and hit the hay. my favorite part about monday: no class! so i planned to hit trader joe's, whole foods, and get this weeks meal prep done<3<3
