My latest cookbook - Viva Vegan
Many non-vegan recipes can be easily converted to vegan friendly, but sometimes it’s nice to just open a cookbook to any recipe and know it’s already done. I’ve been flipping through vegan cookbooks for ideas, but when I picked up Viva Vegan, by Terry Hope Romero, I knew it had to be brought home!
My husband was raised eating traditional Cuban food. Many of the recipes are meat-based or rely on animal products for flavor, so in switching to veganism he was prepared to give up many of his childhood favorites. We had discussed how we might make similar dishes for holidays and other events, but as new vegans, we needed a base to start with.
Viva Vegan is filled with latin recipes from basic sofritas to empanadas to seitan ropa vieja, a Cuban pork dish. There are multiple homemade seitans to use as bases for the typically meat filled dishes, plus plenty of vegetable recipes like tamales. There’s even a chapter of traditional desserts like flan and Arroz con Leche!
Looking through the book I grew more and more excited, and I look forward to sharing pictures with you as I go!
