Omg! So my avocados STILL aren't ripe so we made Fajita quinoa bowls for lunch (and dinner) and it was a blessing in disguise. This is seriously the BEST meal prep ever. Idk if it's a legit meal prep since it's just lunch and dinner, you could definitely stretch it out if it's just for one person though! Highly, highly recommend! (Note: we used a quinoa blend with brown rice. The flavor was red pepper and basil.
