These delicious and festive Paleo, AIP, and vegan holiday mince pies are made without flour. The filling is naturally sweetened with dried fruits and flavored with warm spices, and the crust, made of almond flour, is flavorful and tender.
Ingredients: For the crust:. 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup tapioca flour. 1/4 cup coconut oil, melted. 2 tbsp maple syrup. 1 tsp vanilla extract. Pinch of salt. For the filling:. 1 cup chopped mixed dried fruits dates, raisins, apricots, etc.. 1/4 cup unsweetened applesauce. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. Zest of 1 orange. 1 tbsp lemon juice. For garnish optional:. Coconut cream or coconut yogurt.
Instructions: Preheat the oven to 350F 175C and grease a muffin tin. In a mixing bowl, combine all the crust ingredients and mix until a dough forms. Divide the dough into 12 equal portions and press each portion into the greased muffin tin, forming a crust. In another bowl, mix together all the filling ingredients until well combined. Spoon the filling into each crust, distributing evenly. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown. Allow the pies to cool in the tin for 10 minutes, then carefully transfer them to a wire rack to cool completely. Serve with a dollop of coconut cream or coconut yogurt if desired.
