These homemade watermelon marshmallows are a delightful treat with a refreshing watermelon flavor. Perfect for summer or anytime you want a fruity twist on classic marshmallows.
Ingredients: 3 cups watermelon juice from fresh watermelon. 3 tablespoons unflavored gelatin powder. 2 cups granulated sugar. 1/2 cup corn syrup. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1/2 cup powdered sugar for dusting. 1/2 cup cornstarch for dusting.
Instructions: Grease and line a 9 x 9-inch 23 x 23 cm baking pan with parchment paper. Additionally, grease the parchment paper and sprinkle it with a cornstarch and powdered sugar mixture. Mix the gelatin powder with 1.5 cups of watermelon juice in a mixing bowl. Give it ten minutes to bloom. The remaining 1.5 cups of watermelon juice, granulated sugar, corn syrup, and salt should all be combined in a saucepan. Stir continuously while heating over medium-high heat until the mixture registers as 240F 115C on a candy thermometer. After the sugar syrup reaches the right temperature, take it off the stove and gradually whisk it into the gelatin mixture. Beat the mixture on high speed for 10 to 12 minutes, or until stiff peaks form, using an electric mixer. Beat for an additional one to two minutes after adding the vanilla extract. Using a greased spatula, smooth the top of the marshmallow mixture after pouring it into the baking pan that has been ready. Sprinkle additional powdered sugar and cornstarch mixture on top. Let the marshmallows sit overnight or for at least four hours at room temperature. After the marshmallows have set, cut them into the shapes you want with a greased knife or cookie cutters. To keep the cut marshmallows from sticking, dust them with extra powdered sugar and cornstarch mixture. It's time to enjoy your homemade watermelon marshmallows! Keep them refrigerated at room temperature in an airtight container.

These Watermelon Poke Cupcakes are a tasty and fun treat that are great for summer parties. They taste like refreshing watermelon and have a surprise inside of green whipped cream that looks like watermelon flesh. Add a little extra fun by decorating them with watermelon candies!
Ingredients: 1 box white cake mix. 1/2 cup watermelon puree. 1/2 cup vegetable oil. 3 large eggs. 1/2 cup mini chocolate chips. 1/2 cup seedless watermelon, finely diced. 1 cup whipped cream. 1/4 cup powdered sugar. Green food coloring. Watermelon candies for decoration.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Put the eggs, vegetable oil, watermelon puree, and white cake mix in a bowl. Mix everything together well. Add the mini chocolate chips and watermelon dices and mix well. Use two thirds of the batter to fill up each cupcake liner. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. On a wire rack, let the cupcakes cool all the way down. Get the whipped cream ready while the cupcakes cool. Whisk the powdered sugar and whipped cream together in a different bowl until stiff peaks form. To make it look like watermelon, add a few drops of green food coloring. Once the cupcakes are cool, make holes in the middle of each one with a straw or the back of a spoon. Put some of the green whipped cream into each hole. Add watermelon candies and mini chocolate chips to the cupcakes to make them look nice. Chill until you're ready to serve.
