This should be an interesting brisket. Getting good meat is not overly easy to get right now, I was told that Brisket was on sale at a grocery store another town over from us. I called the butcher at that store to see if I could get a few put aside. Unfortunately they only had one left, but they did put it aside for me. My wife went and picked up the meat we needed for the week, and on her way home she called to tell me the brisket was only $26. I was super confused and asked more than once if she was sure it was a full brisket. When she got home with it I just started laughing, I’ve never even seen a 6lb brisket before. I got looking at it and just kept laughing picturing what I can only imagine was a cow that must have been on the leanest diet imaginable. This little brisket is so thin, and has nearly no fat to it. On the bright side, I hardly had to do any trimming. In the end I’m intrigued to see how this one cooks, I’m smoking this one at closer to 200F to hopefully keep it as moist as possible since I can’t rely on the fat content to do that for me.
