A friend of mine tagged me saying I need to make some cowboy butter the other day. Tonight I made the time to do just that. I’ve never been much of a fan of sauce on beef, but I was impressed at how good this was. The recipe I found called for 2 tablespoons of Dijon mustard and I think that would make the sauce amazing for a sandwich. I can say for sure that I’ll cut that out next time and just add extra horseradish. Keeping those spring vibes going with some kabobs. I didn’t realize just how long it’s been since we’ve had these. A little Irish inspired stew, and to be honest despite my best effort I’m not crazy about it. I took some corned beef brisket and cut it into steaks. I seared them directly over @thegoodcharcoal . Then I put together the stew and used a @clubhousecanada beef stew packet. The meat ended up perfectly tender, but the flavor just didn’t work for me. Anyone else prefer their Picanha rare? I usually keep my Picanha simple with just SPG. I thought I’d go a little more flavor forward on this one and went hard with SPG, but also added a healthy amount of @hardcorecarnivore Red to it. I’ll say right away that I was not disappointed! I always like to keep it simple with this cut to not lose the flavor of the beef to seasonings. The Red seasoning just brought out the natural flavor of the meet and I couldn’t get to the next bite soon enough. Goes without saying I ended up overeating. The hot and fast brisket went alright on the weekend. 16lb brisket in 6 hours and then I let it rest in a cooler for another 2. It was very juicy and the fat rendered well, I did find it a little chewy though. I don’t know that I’ll ever cook one again that fast, but at least I know I can in a pinch. My first ever hot and fast brisket and my first brisket using @thegoodcharcoal . I’m really excited to see how this goes. I hit 170F internal temp in 4 hours at 300F grill temp. The meat is now wrapped and already feels like it’s going to be nice and tender. I was supposed to be smoking a brisket today but had a late night so it didn’t happen. Have to smoke something, so I figured I couldn’t go wrong with ribs. This was an opportunity to try the @sucklebuster Honey BBQ Rub, I wanted to get a taste for the rub itself so I didn’t add anything other than some black pepper. Because of how light the color or the rub is I wasn’t sure what I would get for color on the meat, but that wasn’t a problem at all. I couldn’t be more happy with how these turned out and look forward to using this rub again. It’s currently -20F (-29C) and let’s not even talk about the windchill. Even with these temps two baskets of coals with the dampeners 80% closed and the kettle stayed a steady 350F for this rotisserie chicken. I used the @meatchurch Holy Voodoo for the first time and was blown away.
