Thanks to @theunstuffedpepper we signed up for Hello Fresh and tried out our first meal tonight - Balsamic & Fig Beef Tenderloin.  Hot damn, was it tasty.  Surprisingly tasty.  Like, better than the meal we got from the steakhouse for NYE, tasty (other than the cake - that was amazing).  Definitely looking forward to the other two meals that came in our first box!  Kevin did most of the work on this meal while I fed and got erp to bed so I can’t speak to the prep/cooking of it, but it obviously came together well!  

Yesterday I had a lovely errand filled outing in the cold sunshiney day.  I got groceries, returned a keyboard I got from Amazon that had a sticky “h” key at the UPS Store (as someone who never returns anything and just deals with things, I can’t tell you how EASY it was to return. Definitely encouraging for the future), and then waited in the Starbucks drive-thru line for 30 minutes to try the new shaken espresso drinks!  They were good, but not worth the 30 minute wait.  I can see myself getting them again in the future though, if the line is short :)

Then, to jump on even more bandwagons, I made the Tiktok feta pasta.  I obviously used too much feta and it threw the entire ratio off.  It was good, but not that good.  Although, I think I’m biased because I’m still dreaming of Kevin’s mom’s sauce.  The feta pasta was easy to make and will be a nice thing to have in my arsenal of options.    

To soak up the sunshine before it rains all next week, we went on a family walk this afternoon.  My favorite conversations with Kevin are always talks of our future together.  We’ve got a busy next couple months coming up so it was nice to enjoy this peaceful time before all the chaos starts in a week+.  But, for now, we talked about the kind of house we want to buy, and the upgrades to furniture and electronics once we’re settled into a home and can afford it.  Or what kind of vacations we’re going to take when he’s an attending with 2-4 months off a year and debt is paid off.  Always dreaming and scheming.
