RECIPE: Peach Protein Boost Smoothie (from Smoothie Project by Catherine McCord)
Many years ago, I started buying peaches at our farmers’ market from the peach ladies, as I affectionately call the gals from Tenerelli Orchards. To this day I don’t think I’ve ever tasted anything as mouthwatering as the peaches that grow on their trees. The peach ladies also let me buy their “seconds” (meaning their bruised stock), which I slice up and freeze so that we can continue to enjoy them in our smoothies for months after peach season ends.
I let the peaches speak for themselves in this smoothie, added a date for a sweet caramel note, and incorporated flax, chia, and protein powder to make sure you stay nice and full. Whether you’re able to get fresh peaches from your farmers’ market or frozen from the grocery, it’s all good. This is a smoothie that invites you to enjoy summer produce all year long.
Serves 1
Ingredients:
1 cup (160 g) fresh or frozen peach slices
1 dried date, pitted
1 tablespoon flax seeds or flaxseed meal
1 tablespoon chia seeds
1 serving vanilla or plain protein powder
1 cup (240 ml) almond milk

Combine all the ingredients in a blender and blend until smooth.

These Potato Po'Tacos are a delicious twist on traditional tacos, featuring flavorful roasted potatoes as the star ingredient. Packed with fresh toppings and nestled in warm corn tortillas, they're perfect for a quick and satisfying meal!
Ingredients: 4 medium potatoes, peeled and diced. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon garlic powder. Salt and pepper to taste. 8 small corn tortillas. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1 avocado, sliced. 1/2 cup shredded cheese optional. Sour cream or Greek yogurt for topping optional.
Instructions: Get the oven ready by heating it up to 400F 200C. Add the diced potatoes to a bowl and mix in the olive oil, paprika, garlic powder, salt, and pepper. Make sure the potatoes are covered all over. Spread the seasoned potatoes out on a baking sheet. Roast them for 20 to 25 minutes, stirring them every now and then, until they are golden brown and soft. Follow the directions on the package to warm up corn tortillas. Put shredded lettuce, diced tomatoes, red onion, cilantro, avocado slices, shredded cheese if using, and diced tomatoes on top of each tortilla to make a taco. If you want, you can add sour cream or Greek yogurt on top. Serve right away and enjoy!
