Shiitake Mushroom Pierogi are tasty dumplings that are filled with a tasty mix of garlic, onions, and shiitake mushrooms. The pierogi are cooked in a pan until they are golden brown and served with sour cream.
Ingredients: 2 cups all-purpose flour. 1/2 cup warm water. 1/2 teaspoon salt. 2 cups fresh shiitake mushrooms, finely chopped. 1 small onion, finely chopped. 2 cloves garlic, minced. 2 tablespoons butter. 1/2 cup sour cream. Salt and pepper to taste. Vegetable oil, for frying.
Instructions: In a mixing bowl, combine the flour, warm water, and salt. Knead the mixture until you have a smooth dough. Cover it with a clean cloth and let it rest for 30 minutes. In a skillet, melt the butter over medium heat. Add the chopped onions and garlic, saut until they turn translucent. Add the chopped shiitake mushrooms to the skillet and cook until they release their moisture and become tender. Season with salt and pepper to taste. Remove from heat and let it cool. Roll out the dough on a floured surface to about 1/8 inch thickness. Use a round cookie cutter or a glass to cut out circles from the dough. Place a spoonful of the mushroom filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal the pierogi. In a large pot of boiling salted water, cook the pierogi in batches for about 2-3 minutes, or until they float to the surface. Remove them with a slotted spoon and drain. Heat some vegetable oil in a skillet over medium-high heat. Fry the cooked pierogi until they are golden brown and crispy on both sides. Serve the Shiitake Mushroom Pierogi hot, garnished with sour cream, and enjoy!
