Cowboy Cookies are filled with oats, coconut, chocolate chips, and nuts, making them the ideal treat for any cowboy or cowgirl at heart!
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 teaspoon pure vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 2 cups old-fashioned rolled oats. 1 cup sweetened shredded coconut. 1 cup semisweet chocolate chips. 1/2 cup chopped pecans or walnuts.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the rolled oats, shredded coconut, chocolate chips, and chopped nuts. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper, leaving enough space between each cookie. Bake for 10-12 minutes or until the edges turn golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these delicious Cowboy Cookies with a glass of cold milk!
