Open Crab Ravioli - Squid Ink, Red Beet, Parsley and Spinach, Tomato Pasta - Tomato Essence Jelly - Celery Confit - Parmesan Foam Inspired by Jackson Pollock’s paintings, this is a dish using different types of pasta dough to create a painting on a “pasta canvas.” I wanted everything to be completely white, other than the canvas itself to emphasize the odd, eccentric, and rather playful pasta display. The pasta is intentionally cut in a rectangle, with most of everything else being white, to mimic the experience of how you might see a rectangular artwork on the white, blank wall at an art museum. The white parmesan sauce, frothed by soy lecithin, adds a little bit more visual texture, transitioning the flat but colorful pasta canvas to the white plate. Visually interesting, but needs more work on flavor. Definitely should do more interesting with the crab and change the sauce. I hardly have time to cook these days!
