Leave in storage for 1 hour. Wrap the meat in baking paper and then in foil and place in a preheated oven (350 F 177 C) for 2 hours. We specially use paper and foil to keep all the juice. Potatoes cooking Wash the potatoes and scrape off the husks. I remind you that new potatoes do not need to be peeled with a knife. Good enough to rub. Place the potatoes in a pot of cold water and cook for 10 minutes after the water boils. Discard the potatoes on a sieve and wait until all the water is drained. Place the potatoes in a bowl and add 1 Tbsp olive oil, rosemary, ground pepper, salt, lemon juice. Line a baking sheet with baking paper and lay out the potatoes. Press down a little on each potato and put the baking sheet in a preheated oven (350 F 177 C) for 20 minutes. Tomato dressing Wash the tomatoes and grind them in a blender with garlic cloves. Add olive oil to tomatoes. Salt your dressing. How to serve roasted wild boar Place the meat on a platter and cut into 2 cm thick pieces. Add potatoes and top them with tomato dressing.
