This Winter Salad with Clementine Dressing and Vanilla Bean Candied Walnuts is a great way to enjoy the tastes and textures of the season. Along with the earthy greens, juicy clementines, and crunchy vanilla bean candied walnuts, the sweet and sour clementine dressing goes just right. This salad is bright and healthy, and it's great for any winter event.
Ingredients: 6 cups mixed winter greens such as kale, spinach, and arugula. 4 clementines, peeled and segmented. 1/2 cup pomegranate seeds. 1/2 cup crumbled goat cheese. 1/4 cup red onion, thinly sliced. 1/2 cup vanilla bean candied walnuts recipe below. Salt and pepper to taste.
Instructions: Put the clementine segments, pomegranate seeds, crumbled goat cheese, and sliced red onion in a large salad bowl. Let them mix together. Pour the clementine dressing recipe below over the salad and gently toss it all together. Put vanilla bean candied walnuts on top of the salad. Add pepper and salt to taste. Serve right away and enjoy!

Ingredients: 4 cups of chopped kale. 1 cup of diced butternut squash. 1/2 cup of dried cranberries. 1/4 cup of chopped pecans. 1/4 cup of crumbled goat cheese. 2 tablespoons of olive oil. 2 tablespoons of balsamic vinegar. 1 tablespoon of honey. Salt and pepper to taste.
Instructions: Preheat your oven to 400F 200C. Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 20-25 minutes or until the squash is tender and slightly caramelized. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, and honey to make the dressing. Season with salt and pepper to taste. In a large salad bowl, combine the chopped kale, roasted butternut squash, dried cranberries, chopped pecans, and crumbled goat cheese.
