A hearty and healthy soup with tender beef and a bunch of different vegetables that is great for a cold day.
Ingredients: 1 lb beef stew meat. 2 carrots, diced. 2 celery stalks, diced. 1 onion, diced. 2 cloves garlic, minced. 1 can diced tomatoes. 4 cups beef broth. 1 cup frozen peas. 1 cup frozen corn. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Put some oil in a big pot and heat it over medium-high heat. It will take about 5 minutes of cooking after adding the beef stew meat until it is browned on all sides. Peel and cut the carrots, celery, onion, and garlic into small pieces. Keep cooking for 5 minutes more, until the vegetables get a little softer. It's time to add the beef broth, dried thyme, salt, and pepper. Once the soup starts to boil, turn down the heat and let it cook for 30 minutes with a lid on top. After you add the corn and frozen peas, let it cook for another 10 minutes. Check the seasoning and make changes if needed. Enjoy while hot!

Release pressure, blend the soup until smooth, and serve with a sprinkle of cayenne for an extra kick.
