Irish Potato Candy — Witch Family Recipe for Good Fortune
Happy St. Patricks Day!!! To celebrate, I have a recipe that my maternal side of the family has been making for generations. We are very Irish and settled in Philadelphia, this candy is strictly from this area and doesn’t come from Ireland. It also doesn’t have any potatoes in it. This treat is made every year for me and I love it so much. It brings me back home and it’s so tasty. I’m excited to share it with you.
Ingredients
8oz of cream cheese (room temp)
1/4 lb of butter (room temp)
14 oz of shredded coconut
2 lbs of confectioner sugar
1 tsp of vanilla
cinnamon
Directions
Mix cream cheese and butter into a bowl for a hand mixer, and once creamy mix vanilla.
Then add coconut & sugar to the bowl and mix with your hands.
Place in the refrigerator and cool for an hour.
Take out and use your hands to get a pinch of the mixture, roll it into a ball, and then roll it around in cinnamon until it looks like a little potato.
Then refrigerate again for about 30 minutes and enjoy.
*** As I roll it, I like to throw in a little witchy twist and say a chant that my grandma always says to me. This enchants the candy with good fortune and well wishes.
“May your troubles be less and your blessings be more and nothing but happiness come through your door.”
After the second refrigeration, you don’t need to keep them in the refrigerator, but personally I like to do that because I think they taste better like that.
