I've been wanting to try making tomato egg so I watched a few videos, determined that the recipe is highly subjective, and did what I could with what I had on hand. I'm having it for breakfast tomorrow at work because I'm sick of what I have been packing, but I did taste a little bit and I think next time I will not add a pinch of sugar. I think I would prefer it more sour/acidic. Also, I used cherry tomatoes because that's what I had and I think I would definitely use regular tomatoes next time.
Excited to try it for real in the morning!
(I know, I know. It won't be as good if it's not fresh, but it'll be fine. I'll make it for dinner another time to have the full experience.)
If anyone wants to correct me or give me tips on the preparation, here's what I did:
Scrambled an egg. Didn't have scallion to garnish with so I mixed in some dried chives with the egg because I like them. Took the egg out of the pan and added minced garlic and diced cherry tomatoes (will use big tomatoes next time because these weren't juicy enough). Added water due to the failings of the cherry tomatoes. Added a little bit of sugar and soy sauce (dark - I only have the one kind). Added back the egg. Stirred it up and added a little bit of sesame oil. Put it on rice. Stirred it all together for god knows what reason because I don't typically like my food stirred together. I will pay for this choice tomorrow.
I know some people do ketchup but I'm not big on ketchup so I skipped it. I also don't have rice wine, which I heard was also popular.
