It’s summer time in New Zealand and sometimes the weather is so hot in the evening that you really don’t know what to have for dinner. However, I was pleasantly surprised by last night dinner - nacho salad! In my household, generally I am the one organising and cooking dinner but My partner - @samcb_nz have a few of his signature dishes that he cooks and nachos is one of them. He has a way with chilli that I could never imitate, so when we feel like nachos he is the go to person. However, the weather was so hot last night. We feel the corn chips were too heavy but nachos still sounds like an awesome idea to have for dinner, so he decided to swap it with salad. Feeling adventurous he also decided rather the normal beans, dice tomatoes, salsa and Worcestershire sauce base chilli, he added additional bacon and rice to add texture and taste. He also made the guacamole from scratch, but added pickled cucumbers and mustard to give it extra “oompah!” It was amazing to have all those different textures and taste exploding in my mouth and even though that is not authentic Mexican food but the effort went in to the food was more than admirable.
