Granola Bars
I don’t think I’ve mentioned it here before, but I’m on my school’s rowing team and I wanted to make a post-practice / post-workout snack and was inspired by my friend making protein balls so I decided to make granola bars.
Ingredients:
1 cup peanut butter or nut butter
1/2 cup honey or a honey / maple syrup mix
1 teaspoon vanilla (you can substitute or add some vanilla protein powder here if you want)
1/2 teaspoon sea salt
2 1/2 cups rolled oats
1/3 cup mini chocolate chips or chopped chocolate chips (optional ig)

First you want to mix the sticky stuff, that peanut butter, honey, vanilla, and sea salt. Mix until it’s all smooth before adding the rolled oats. I added them in all at once but I’m sure it’ll go easier if you add it in two or three heaps. Then, add your chocolate chips and whatever add ins you want. If you aren’t adding in chocolate chips, make sure you’ve added at least 1/3 cup of some sort of dry add in to balance out the recipe.
I’ve made this with just those things, no add ins, but I’ve also made it with cashews, peanuts, almonds, some flax seeds, chia seeds, and protein powder. It’s really up to you as long as you make sure that it’s finely chopped / small so that it won’t cause problems in your bars.
Put the mixture into some type of pan (I used a standard 9x9 brownie pan) that’s lined with parchment paper. Cover the top of the mixture with parchment paper after pressing it flat with a spoon or something and slide something big like a glass over the top of it to even it out. Chill it for an hour before cutting it up and store them in the fridge.
Honestly, these were really good and since I cut them into squares it made more than I thought it would. I’ve given these to teammates and my friends and people seem to like them and it’s a very basic recipe you can do just about anything with.
