Week 14 Day 2

Last event day! Our sweet endings event finale is finally here. Our tart crust were done and we walked into class ready to start getting everything ready. We got our pastry ingredients out and our lemon curd, but we couldn't find our tart crusts. I had to ask Chef where they were because I couldn’t find them anywhere. We found out that the group before us had taken our tart crusts and used them for their event. We had to use theirs because that’s the only choice we had, but we made it work. It was extremely disappointing because we knew how good our tarts were and we took our time trying to make them as best we could. Anyways, we finally got our table set up and tarts plated just in time for the first taster to come. Our tarts turned out great despite the fact that the crust was not ours, but we were all happy with how they turned out. My biggest AHA moment was learning to move past not having the right item and working with what we got. I also learned that we definitely needed to manage our time better because we were still plating the last tart when our first taster came.
