I made baked yam chips today. Purple yams are just sea salted, orange yams are smokey and spicy chipotle flavoured. So delicious, and much healthier than the potato chips I crave too often. After much trial and error I've finally found the best way to make these nice and crispy. I toss in a bit of oil (I used grapeseed oil to avoid a flavour) and desired slices. Layer on a pan covered in parchment, single layer! Bake at a higher temp to cook through about 350 for 5-8 minutes depending on your oven. Reduce heat to 250 and continue baking until dried out. This took about half hour. Remove from oven and let cool. They'll seem like they are a little bit chewy while still hot, but once cool they are nice and crispy.
Day ONE of my Paleo Diet
Attempting to do the Paleo diet... main reason; all the claims of amazing energy when you're on it.... reason 2, six pack abs! BEACH BOD. But yeah... want to get my energy levels upppp and have a feeling bread, juice, and chocolate aren't helping.... SO thanks to my mom, I have some cook books and info books and here we go. I made Kale Chips in olive oil with garlic and sea salt. Though it took 3 times longer to make them than the recipe called for... user error?
I also made YAM chips in coconut oil. Who knew coconut oil was solid? Not me... "HAS THIS GONE BAD?" Now... apparently Sobey's and Safeway both don't know what a YAM and a SWEET POTATO are... I was planning on sweet potato (mash em, boil em, put em in a STEWWWWWWWW) chips but bought "sweet potatoes" that turned out to be yams (they look so similar and were labelled wrong... my bad?). These were AMAZING and SO easy!
AND I made "Rocket Fuel" which was chopped pecans, almonds, dates, egg whites, and cinnamon. Now NEXT time I would add more dates to make them a little sweeter and maybe even some honey (you can get Paleo approved honey!) but these are AWESOME too... And maybe some "cream" (hello Coconut milk!) and mushroom chicken tonight for supper.
SO day one's thoughts... can you get super fat by eating on Paleo if you eat like 100 times more of it a day. I WANT TO EAT ALL THE THINGS. Blaming it on the lack of refined sugars and bread and gluten.... day one, so far, so good.
ANYONE trying Paleo should download the ap Paleo Central. You can put in any food and it will tell you if you can eat it or not. Random thoughts... gonna try and "Blog" about my Paleo diet.
