In my personal opinion, Sukuna can absolutely be a fluffy character, or at least be put into fluffy situations. The thing is, we've always ever seen him at his worst, when he had already completely rejected living with people and fully accepted his being "other". Ever since the very first chapter of the manga, we see Sukuna causing trouble, being cruel, mocking Yuji, and he only gets "worse" as the story goes on. The Sukuna of 90% of JJK can't be a fluffy character: he has already reached the decision to be a villain, to participate to the Culling Game because literally nothing matters in his empty life. (And both Yuji and Kashimo call him out on this, and Sukuna is like "I. Feel. Nothing. :) " while feeling A Lot™ lmao)
Only at the very end, when he loses, we see him decide to try living another way and finally reconnect with little Uraume, another human being, another person.
And I feel like fluffy/romance writers of Sukuna were vindicated, in a sense, when that ending dropped. It was as if Gege were saying: "Hey, see? He could have led a normal life filled with love, but he was too scared! He had all the potential to be like any other human, but alas!"
So people are now exploring that potential, that "what if?", that "what happened before he got too scared by his own curse?" and I find that super awesome and cathartic
