The Cookery Club at SNS had the honored guest of the day,
Ms. Vijayalakshmi, an accomplished entrepreneur who shared insights into the significance of various ingredients in North Indian and South Indian cuisines.
Following her guidance, The students enthusiastically participated in preparing the featured dish of the event, Aloo Paratha. Under the careful supervision of our guest, the young aspiring chefs demonstrated exceptional teamwork and adaptability.
They thoroughly enjoyed the entire process and savoured the dish they had prepared, alongside their supervising teachers. The entire session was conducted in an organized and seamless manner.

Pan flare🔥🔥🔥🔥🔥 I’m not sure if this is the term other chefs use? — •You do not want pan flare ever! 🚫🚫🚫🚫🚫🚫🚫🚫🚫🚫🚫🚫 •Except if you are using a Wok possibly Or •You are flambéing -burning alcohol off a dish — Generally speaking if a pan is hot you can control the heat. A pan can get too hot though, adding a dreadful, over scorched taste to food, an easy mistake to make - one salvageable with a chef’s love. A too hot pan with a touch of oil(or even dry), combined with a tiny splash of liquid creates #panflare🔥instant fire🔥 if you are quick you can get down low and blow across the pan to get it out super quick, you may have saved it🙌otherwise CHUCK IT OUT! This flaring leaves a terrible gaseous scorched oil taste throughout your entire dish. Once you have tasted it and understand what it is.. what it does to food, you will understand why you need to stop this happening in your kitchens immediately. You can check simply by tasting( run your finger across the bottom of the pan, seriously! ) before you continue with the dish. If THAT taste is there you can NOT fix it. Start again. Every time👩🍳— I promise that now you know this... you will not only smell it in a dish before it hits yours table, you you will hear it happening in the kitchen. It’s like hearing milk being over heated to squealing point by an inexperienced barista. — Experiment yourself. I am really sensitive to this taste and any chef in my kitchen learns pretty quickly that I won’t accept it on the pass. My favourite term in the kitchen and the most critical one for young chefs to learn, understand and set up everyday. — The most important part of every chefs day👩🍳 — There are spoken and unspoken rules in kitchens.. rules that date back hundreds of years that are steeped in tradition. Many unchanged and many more outdated and needing to be realigned with this new world. Rules surrounding hierarchy and uniform, the discipline required to be successful-the close hot quarters combined with ego, respect and the complex desire for accomplishment and acknowledgement. — Mis en place is the crucial building block to success in the kitchen. You put into place what needs to be done. Your prep list checked off and completed. Checking everything twice. Knowing anticipated dining no.s. Are there specials that affect your section. Service set up including -the right tongs, the right set up for cooking flow, back up where it needs to be- Check in with the rest of the team- there set up can affect your set up and vice versa. If your salt and pepper is not in its place or you have a shitty pair of tongs to work with you are probably going to have a shitty night. — Learning something new always starts with the tedious basics, this is what you need to keep building better skills.
