Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 1 tsp vanilla extract. 1/2 cup sour cream. 1/2 cup whole milk. 12 miniature peanut butter cups, unwrapped. 1 batch of your favorite chocolate frosting. Additional peanut butter cups for decoration.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients mixture, alternating with the sour cream and milk, beginning and ending with the dry ingredients. Mix until just combined. Scoop a spoonful of batter into each cupcake liner, filling them about 1/3 full. Place a miniature peanut butter cup into each liner, then cover with more batter until they are about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the cupcakes comes out clean. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
