Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup creamy peanut butter. 1/4 cup marshmallow fluff. 1/4 cup unsalted butter, softened. 1/4 cup milk. 1 egg. 1/2 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, cream together the softened butter, peanut butter, and granulated sugar until light and fluffy. Add the egg and vanilla extract to the butter mixture, and beat until well combined. Mix in the marshmallow fluff until incorporated. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
