Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup shredded coconut. 1/4 cup chopped walnuts. 2 tsp instant coffee granules. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 1/2 cup milk. 1/4 cup sour cream. 1 large egg. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with paper liners. In a large bowl, combine flour, sugar, shredded coconut, chopped walnuts, instant coffee granules, baking powder, baking soda, and salt. In a separate bowl, whisk together melted butter, milk, sour cream, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
