Ingredients: 1 box lemon cake mix. 1/2 cup unsalted butter, melted. 3 large eggs. 1 cup milk. 2 tablespoons poppy seeds. 1 teaspoon vanilla extract. 1 cup powdered sugar. 1 1/2 cups white chocolate chips, melted. Lollipop sticks. Sprinkles for decoration.
Instructions: Preheat oven to 350F 175C and grease a cake pop mold. In a large bowl, combine the lemon cake mix, melted butter, eggs, milk, poppy seeds, and vanilla extract. Mix until well combined. Pour the batter into the cake pop mold, filling each cavity about two-thirds full. Bake for 15-20 minutes or until a toothpick inserted into a cake pop comes out clean. Allow the cake pops to cool completely. In a separate bowl, mix powdered sugar into the melted white chocolate until smooth. Dip the end of each lollipop stick into the melted white chocolate and insert it into a cake pop. Dip each cake pop into the melted white chocolate, covering it completely. Allow excess chocolate to drip off. Decorate with sprinkles while the chocolate is still wet. Place the decorated cake pops on a parchment paper-lined tray to set. Allow the chocolate coating to harden before serving.
