These salmon burgers are a family favorite for a reason. They're made with fresh salmon, flavorful seasonings, and topped with quick-pickled cucumbers for a zesty crunch. Perfect for a summer BBQ or a weeknight dinner.
Ingredients: 1 lb fresh salmon fillet, skinless and boneless. 1/4 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1/4 cup chopped fresh parsley. 1 egg, beaten. 1 tablespoon Dijon mustard. 1 teaspoon lemon zest. Salt and pepper to taste. 4 hamburger buns. 4 lettuce leaves. 4 slices of tomato. 4 slices of red onion. 4 slices of Swiss cheese optional. 1 cup thinly sliced cucumbers. 1/2 cup white vinegar. 1/4 cup sugar. 1/2 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon red pepper flakes optional.
Instructions: In a food processor, pulse the salmon until finely chopped. In a large mixing bowl, combine the chopped salmon, breadcrumbs, red onion, garlic, parsley, beaten egg, Dijon mustard, lemon zest, salt, and pepper. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat a grill or grill pan over medium-high heat and oil the grates to prevent sticking. Grill the salmon burgers for about 4-5 minutes per side, or until they are cooked through and have grill marks. Optional: Add a slice of Swiss cheese on top of each patty during the last minute of grilling. While the burgers are cooking, prepare the quick pickled cucumbers. In a bowl, combine the sliced cucumbers, white vinegar, sugar, salt, black pepper, and red pepper flakes. Toss to coat and let them sit for about 5 minutes. Toast the hamburger buns on the grill for about 1 minute, until they are lightly browned. Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom bun. Top with the salmon patty and melted cheese if using, a slice of red onion, and a generous portion of quick pickled cucumbers.
