RED ONION QUICK PICKLES
Our latest proper produce storage guide from Maia Welbel gives y’all the low down on keeping your fruits and vegs fresh to avoid that extra trip to the grocery store. (We can all use a little less stress at the moment.) But if you’ve run out of ideas for what to do with your extra alliums quick pickling is another great way to extend the life of your produce! Quick pickles keep quite a while in the fridge (hello jar I found at the back of the fridge 3 months later, still delicious) and are one of my favorite toppings to liven up the routine quarantine meals we’ve been making lately.
Storing your ingredients properly, learning new techniques to preserve, and keeping track of what you have on hand all go a long way to feed you and your family. Having a few tricks up your sleeve can make the difference between a crispy quick pickle and the saddest onion you’ve ever seen.
For this easy red onion quick pickle recipe you just need an onion, salt, vinegar, and something spicy if that’s your jam. Quick pickles are a great way to use up other herbs or ingredients you want to preserve. Get wild and customize that pickle. You can make them today and enjoy them on every appropriate meal for the next 3 months. Who says onions aren’t a breakfast food?
