1.5 sticks (3/4 of a cup) of unsalted butter
2 + a little bit by mistake tsp vanilla extract
healthy amount of chocolate chips
heat pan to medium, then take one stick of unsalted butter (half cup) and toss it in the pan. with a spatula, stir continuously to keep butter from burning as it melts, and then starts to foam up, and takes on a deep brown color. (crucially, you must use a pan that is slightly too small and then, because you can't see the butter brown like you're used to, let the milk solids burn pretty entirely. then you're gonna want to go bother your girlfriend until she tells you it's fine.). pour browned butter into mixing bowl, then wait like thirty seconds before cubing then adding half a stick (quarter cup) of butter and stirring it with a spatula until it all melts. then wait until it fully comes to room temperature and solidifies (you want it soft so don't fridge it)
while butter solidifies, prepare the dry ingredients. In a bowl, whisk together 240 g flour, 4 g salt, and like 6 g baking soda (it was supposed to be 4 but you poured in too much by mistake. it's fine. what's the worst that could happen. it's fine. you're doing a good job. you can do this.)
cream 200 g dark brown sugar and 50 g granulated sugar into solidified and still soft butter in bowl. this means you basically take an electric beater and beat it until the texture like. changes somehow. it turns slightly lighter? it's weird. also i wanty ou to note that sugar is a wet ingredient not a dry ingredient. isn't that fucked up.
add two egg yolks and one whole egg to wet ingredients, along with 2 tsp vanilla extract plus the additional vanilla extract that you spilled in because you're really good at pouring. feel awesome. mix this together with a whisk really good in the bowl. feel great.
pour dry ingredients bowl into wet ingredients. with a spatula, fold them together. this means kind of scooping up the sides of the wet in the bowl and pressing it into the dry, over and over and over. it should all come together pretty nicely into a 'cookie dough' like texture. if you're doing this right, you'll hear your girlfriend's voice in the back of your head explaining to you how actually the best way to do this step is to mix it with your hands the whole time.
add an excessive amount of chocolate chips. you'll want to add a reasonable amount first, then mix them in, then decide that you actually want more and add even more, and then they wont entirely come together right and youll feel kinda bad but it's fine. it's fine. you're like. soooooo good at cooking. you mean baking. it's fine. everything's fine.
cover bowl and let rest in fridge for a couple hours while you text girls who all compliment you and call you cute. because you're awesome. and cute probably too. haha yeah. it's awesome being you. oh fuck it's been four hours.
preheat oven to 375 degrees fahrenheit. while that happens, take the bowl out of the fridge, and prepare two baking sheets. you're gonna need a girlfriend who really likes baking for this who owns these like rubber but probably not actually rubber cookie baking sheets for this step to get the ideal texture. scoop the cookie dough with spoons and lay it out on the sheet, forming about sixteen hockey pucks. about halfway through you're gonna basically just switch to using your hands, ignoring the disgust from touching oily thing to fingers, but you'll continue using the spoon to separate the dough from itself. kinda like how you wrongly think an ice pick works. then squeeze all the balls into shape again when you're done. to be sure.
once the oven has finished preheating, which takes fucking forever for some reason, put them in on the middle rack, not too close to either the top or the bottom. then you'll want to set a ten minute timer, then look at them and realize they're wayyyy bigger than usual and look like they're not quite done in the middle, and you're gonna want to wait another two or three minutes before taking them out.
after waiting like thirty minutes to an hour, take a bit! wow! the center is so gooey! and yeah that sure is a burnt aftertaste! yummy! yay!
