In essence: the left/right and up/down movement of the stylus is transferred to a magnet which moves next to a coil of wire, creating electrical impulses that are then sent to an amplifier, onto a set of speakers, and voila.

It works because the groove is a physical version of the actual waveform of the music. Depending on the record and turntable setup, if you turn the volume right down and put your ear next to the stylus you can faintly hear the music. All the cartridge, amplifier, and speakers do is make it loud and clear enough for normal listening.
