As for recipes, your best cuts are the muscles that sit on the bowell as they are non-working and will be the most tender. You can make a nice fillet with those: marinated with a semi-dry red wine, shallots, thyme, pepper, a dash of brown sugar for just a little sweetness.

Avoid the brain and liver as they can be incredibly dangerous to eat. The brain can give you Kuru and the buttery taste is not worth your life. Similarly, the liver can cause an overdose of Vitamin A which causes headaches, muscle weakness and vomiting.

The lungs are rather chewy and while they can be incredibly delicious in certain dishes like Polmoni di vitello con fagioli, I usually try to avoid them. However, if you enjoy chewy meat ( think squid or octopus ) you’ll be alright.

My personal favorite cut is ribs. I marinade mine in a mixture of soy sauce, brown sugar, honey, olive oil, garlic, onion, Worcestershire sauce, and a sweet white wine. I bake mine slowly in the oven and bast when needed.
