Glengoyne
One of the first scotches I tried came from the Glengoyne Distillery. It is a classic distillery that has operated since 1833. It is unique in the stills are in the Highlands, but the whisky is casked in the Lowlands. Scotch is one of the few spirits that the flavor is largely affected by where it is casked. The surrounding air will affect the whisky bringing a unique flavor, which is why so much emphasis is on where casking takes place. The Lowlands are typically known for having a lighter and fresher flavor, partly due to the triple distillation process, while the highlands are more smooth and floral. The unique combination of the distillation and casking makes for an interesting series of whiskies.
12 Years
The nose had some smoke to it which is reflected in the initial tasting. As you swallow and experience the finish, the flavor smoothes out very nicely.
15 Years
This had a strong flavor with a surprising amount of smoke at the finish. It tastes very traditional. If you are looking for a classic spirit that embodies what scotch stands for, this is the one for you.
18 Years
The scotch had a very earthy note from American oak barrels it is casked in. The flavor is much more spread out and you experience every aspect of the flavors. It has a smokiness throughout from start to finish, despite it not being made with peat.
21 Years
I was fooled by this scotch. It has a very clean and fruity nose indicating a simple smooth taste. However, after my first sip I realize it is incredibly complicated. A rich, deep flavor works in tandem with the taste of the wood from the cask providing the smoothest palate out of all of the scotches so far. An unbelievable whisky you should pick up if you get the chance.
