I haven't made cauli-rice in a long time. I forgot how delicious it was! Definitely would make this again!
Lemon-Italian Herb Chicken with Roasted Garlic Brussels Sprouts The chicken was made in he crockpot and turned out pretty tasty. It made plenty of chicken for meals the rest of the week. The Brussels sprouts were my favorite portion. Roasted in coconut oil with garlic salt. Mmm mmm!
Pork Chops with Pineapple-Cucumber Salsa Recipe: http://emeals.com/recipes/recipe-16825-111334 With school in session, I've been eating quick meals. It was nice to actually grill some real food. I added garlic salt to the pork, because everything is better with garlic. I felt like the salsa was missing something, so I topped with a little cajun seasoning. Very tasty!
Grilled Chicken Breasts with Lemon-Basil Vinaigrette Recipe: http://emeals.com/recipes/recipe-15760-104374 The chicken was pretty delicious even without the vinaigrette. Grilled six minutes per side to perfection. The vinaigrette was good in small amounts. If too much, the basil was a little overwhelming. A delicious summer dish!
Summer Thyme Pork Chops with Steamed Broccoli
One word: AMAZING! I had intended on making a different kind of pork chop but didn’t have time to marinate, so I decided to go another route. Tweaking a recipe for a rub, I seasoned with garlic salt, thyme, basil, pepper, paprika and a small amount of rosemary. Grilled for 5 minutes per side and they turned out perfection. The hubs even went so far as to say he’s never had a pork chop that good even from a restaurant. As we were eating them we were trying to come up with a name for them. Summer Thyme Pork Chops it is!

We recent,y got a new grill and am still figuring out its heat levels. I don't have it down to a science like I did before! I do have to say the grilled peaches were my favorite. Mmm mmm good natural flavor!
Turkey Sausage-Sweet Potato Hash with Peach, Blue Cheese and Almond Salad Recipe: http://emeals.com/recipes/recipe-15184-100527 I had the day off today and that meant I took the time to prep for supper. It's been a while where we've had actual food and not something quick. I made the hash with no spinach and added more salt than the recipe called for. I feel the spinach would have added an odd texture to the hash. The hash turned out delicious. Very excited for leftovers tomorrow for lunch. The salad was amazing. It was 5 oz spring mix, 2 peaches, 2 oz sliced almonds, and a small container of blue cheese. I used mango chipotle on my salad and the hubs used honey mustard. He had three servings before he even had the main dish! Excellent, easy to make salad.

This doesn't mean we're going all out, we're still eating healthy, just not quite as restricted. Supper tonight was cashew chicken. The recipe called for finer, which I was unfortunately out of. It was absolutely delicious none the less! I would absolutely make this again in the future.

I'm ready for summer and things to calm down!Pretty soon it will be grilling season, which would have been perfect for this recipe. The burgers turned out interesting....they weren't bad, actually quite full of flavor, but had an interesting texture. I think they would have been delicious grilled. The Brussels sprouts and pineapple were a delicious compliment to the turkey. I do love fresh pineapple!
Herbs de Provence Chicken with Steamed Veggies After working late I wanted something easy for supper. I coated chicken with olive oil and lemon juice and sprinkled liberally with Herbs de Provence. I pan fried and served up with steamed peas. Quick and delicious!
Skillet Sausage and Apples with Balsamic Spinach and Tomatoes Recipe: http://emeals.com/recipes/recipe-13260-87828 After a week and a half of gorging ourselves on vacation with some very non healthy food, this home cooked meal was much needed! I was worried that the main dish wouldn't have much flavor, but it was better than I anticipated. The apples were a tasty combination with the sausage that I probably never would have thought to put together. The spinach and tomato side was a flavorful side that complimented the tame was of the main dish. While tomatoes aren't among my most favorite foods, I didn't mind them in this dish.
Blackened Tilapia
It is now lent, which means fish on Fridays. The hubs has a very strong dislike of fish, making it a challenge to cook something he likes. Blackened tilapia was a winner, with him complimenting it and even having seconds! The seasoning for the tilapia was a combo of paprika, coconut palm sugar, cayenne pepper, oregano, garlic powder, cumin and salt. We may be having this a few times during Lent….
Sweet Potato Sloppy Joes
Rather than getting groceries tonight I decided to use up what was left in the kitchen. It led to some very delicious sweet potato sloppy joes that thankfully used up the last of the produce we had laying around!
Ingredients: 1Â lb ground beef 3 oz tomato paste 8 oz tomato sauce 8 oz salsa 1 tbsp Apple Cider vinegar 1 tbsp coconut palm sugar 1 tbsp coconut aminos 1tsp ground mustard 1/4 tsp cinnamon 1/2 tsp liquid smoke 1/2 white onion, chopped 1/2 green bell pepper, chopped Red pepper flakes to taste 4 garlic cloves 2 sweet potato
Brown beef, onion, green pepper and garlic together in pan. In a medium bowl, combine remaining ingredients. Once meet is browned, add sauce and cook 5 minutes. Serve over baked sweet potatoes.
Sausage-Veggie Egg Casserole Recipe:http://emeals.com/recipes/recipe-12267-81324 I would first like to disclose that I despise eggs. They are not an item that I would ever seek out (with the exception of deviled eggs). With that said, these were honestly not that bad. My husband said it was amazing, I wouldn't go quite that far. However, I did each an entire piece without cringing which is a big deal!
