#MeatlessTuesday While I was in Brooklyn, my famished tourist self randomly went in to a soul food buffet restaurant after a workout and tried this spinach rice dish and boy was it 🙌🏽😩😍. I had to whip it up in my kitchen. Since I'm trying to lay off meat few times a week, I paired it with a pan-seared salmon. The burnt areas are just chili powder y'all.
