Vietnamese Braised Pork and Eggs in Caramel ( Thit Heo Kho Trung ) This is a traditional dish served during Chinese New Year. Normally it takes hours to braise the pork belly or pork butt, for a way quicker version, I cheated by using Trader Joe's Fully Cooked Pork Belly. Ingredients: -1 box (12 oz.) Trader Joe's Fully Cooked Pork Belly cut in 1" cubes -3 hard boiled eggs, peeled -1 clove of garlic, minced - 1 tsp of ginger, minced -1 tablespoon of fish sauce - 1 cup of low sodium chicken broth For caramel sauce: - 3 tablespoons organic cane granulated sugar - 2 tablespoons water In a small pan, combine sugar and water over medium heat and watch it closely. Once it melts the mix will start to change color. Once it turns to a deep brown color, remove from heat and set aside. Heat a medium sized pan over medium heat. Add the cubed pork, ginger, and garlic and stir until fragrant and light brown in color. Add fish sauce and slowly add caramel sauce. Add less or more caramel sauce to your own personal taste. Then add the chicken broth and braised pork for 15 minutes then add you hard boiled eggs to the pot. Serve with steamed rice or noodles Serves 4

Maple Dijon chicken 8 drumsticks (skin removed) 2 shallots, thinly sliced 2 cloves garlic, minced 1 1/2c low sodium chicken stock 1/4c maple syrup 1/4c Dijon mustard 1T dark cherry balsamic vinegar 2T vegetable oil Sea salt and cracked black pepper to taste Heat your skillet on medium/high with vegetable oil Season the drumsticks with sea salt and pepper then brown in the skillet then remove and set aside Add shallots and garlic to the skillet and cook until fragrant, then deglaze with chicken stock (scrap up all that brown goodness) bring that to a simmer In a small bowl, combine the maple syrup, Dijon mustard and vinegar (if you don't have dark cherry regular balsamic will work just fine) until smooth and add to the simmering chicken stock Return the chicken to the party making sure to spoon the sauce all over it, cover with a fitted lid and cook till tender Serve with your favorite side dish! I served mine with mashed potatoes and sautéed kale, Brussels sprouts and leeks
Homemade pancakes, ran out of buttermilk so I made my own 1Tbs lemon juice 1cup of milk, let that mixture sit for 5minutes then....BOOM you have buttermilk
