I like to think that when stanley got his memories back he only got the ones from the scrap book back and doesnt remember his childhood so ford tells him stories from when they were young but makes sure to miss the bad details

Please keep in mind, Stan literally had no clue if Ford was even still alive. He spent 30 years working on the portal, learned physics and math, stole toxic materials, and almost got arrested by the federal government without even knowing if Ford was actually alive or if he would ever find him again.
